Zucchini Pancakes

Recipe by:zainab

500 g Zucchini.
3 Scallions,finely chopped.
1/2 cup fresh parsley ,chopped
2 eggs.
1/4 cup white flour.
1/4 cup whole wheat flour.
Salt and ground pepper.
1/2 Tablespoon olive oil ,for shallow-frying.
low fat sour cream,for serving (optional).


1)Coarsely grate Zucchini .

2)Transfer to a large bowl ,stir in Scallions,parsley,eggs,flour,Salt and pepper





3)Heat oil in frying pan , shallow- fry 1/3 cup of mixture until golden brown both sides and cooked through(4 to 5 minutes per side).
Flatten slightly during cooking.



4)Serve immediately with sour cream.

zainab how beautiful those look! I will have to try them soon. They seem an easy recipe as well. I wonder what a little applesauce would taste like with them? And a pork chop? Hmmmm. :D TIA!!!

Hi,

In Turkey, we also put grated feta cheese in the zucchini pancakes (called Mujver-- I always thought this was an Arabic word ).
Try it, you may like it. But, do not put any salt since feta is quite salty.
Also we use stirred or strained thick yogurt(labneh or Greek style) as a sauce rather than sour cream.
