Mini Grilled Flatbread with Hummus & Baba Ghanoush

Mini Grilled Flatbread


Mini Grilled Flatbread

Recipe adapted from Kath Eats Real Food (without adding the herbs)
Makes 16 mini flatbread

2 cups unbleached flour (you can use 1 cup whole wheat flour + 1 cup unbleached flour).
3/4 cup warm water.
1/2 teaspoon salt.
1/4 teaspoon dry yeast.
1 Tablespoon olive oil.
1)place all ingredients in a bowl of mixer , knead for 10 minutes to make a soft dough.
2)Cover the dough and let rise for 90 minutes.
3)Preheat oven to 550 F.
3)Divide the dough into 16 pieces; shape each piece into a ball, allow to rest for at 20 minutes.

4)Roll them into circles (4 or 5-inch circle) on a floured board.
5)Bake on hot baking surface for 1 minute per side.


Hummus

Hummus


2 cans (about 410g each)chickpeas.
1/4 cup fresh lemon juice.
1-2 clove garlic, crushed.
1/2 cup tahini.
2 Tablespoons olive oil.
salt (to taste)
enough water to smooth the hummus.

olive oil for drizzling.
Red hot pepper for garnish.

1)Place all all ingredients in a food processor.
2)Process until smooth (add water if need it).
3)Drizzle olive oil on top & sprinkle with red hot pepper .

Baba Ghanoush

Baba Ghanoush

500 g medium eggplants (roasted).
1/8 or 1/4 cup fresh lemon juice.
1-2 clove garlic, crushed.
8 Tablespoons tahini.
2 Tablespoons olive oil.
salt (to taste).
1/8 cup Fresh Labneh or you can use strained yogurt.
1/4 cup fresh coriander.

olive oil for drizzling.
1/4 cup fresh coriander for garnish.

1) Pierce eggplants in several places with a skewer.
2) Place whole eggplants on oven tray. Bake, uncovered in 450 F oven about an hour or until soft; cool 30 minutes.
3) Peel eggplants, chop flesh; discard skins.
4)Place all all ingredients in a food processor.
5)Process until just combined.
6)Drizzle olive oil on top & sprinkle with fresh coriander.

Kobzat al feta wal basal (Feta stuffed bread)

Dough:
6 cups unbleached flour.
2-2 1\4 cups warm water.
2Tablespoons oil.
1 Tablespoon sugar.
2 teaspoons yeast.
2 teaspoons baking powder.
2 teaspoons salt.
oil ,for shallow-frying.

Feta & cheddar Cheese Filling:



250 g cheddar cheese.
250 g Feta cheese.
2-3 scallions, sliced.
fresh Coriander, chopped.
Combine all ingredients in bowl,mix well.



1)Place all ingredients in the bowl of mixer, Knead until the dough is soft for 5 minutes. Put the dough in a bowl that has been sprayed with vegetable spray.

2)Cover dough and let rise in warm place until doubled in size, for 1-2 hours.

3)Divide dough into 16 pieces & roll each of them into a ball, roll the ball out into a round.

4)Fill each with 1-2Tablespoons of the filling, pinch and seal the edges.

5)Preheat frying pan or griddle iron over high heat. Then adjust the heat to medium heat & add 1 Tablespoon of oil.

6)On a lightly oiled board , flatten stuffed bread gently using your hand.



7)place the stuffed bread on the frying pan & cook until golden brown on both sides (1 to 2 minutes per side).



Serve with salad or soup.

Khiar be laban (cucumber with minted yogurt )

3 Cucumbers,Chopped.
2 Cups yogurt
1/2 teaspoon dried mint
Pinch of salt, to taste

Combine all the ingredients in bowl, cover, refrigerate, until you serve .

Salata Hara

3 chopped tomatoes.
1/2 cup fresh coriander.
Juice of half a lemon
salt to taste.


To make Salata Hara:
Blend or process chopped tomatoes+ fresh coriander until pureed than add the lemon juice & salt to taste.

Al3ish Albalady ( EGYPTIAN Flat Bread )

2 teaspoons yeast.
3 cups white flour.
3 cups whole wheat flour.
4 Tablespoons oil.
2 teaspoons sugar.
2 teaspoons Salt.
4 Tablespoons dry milk.
2 cups warm water.
116 g sourdough starter.

Wheat bran for roll the dough.


1) Place all ingredients in the bowl of mixer; beat 10 minutes to make soft dough.


2) Cover dough and let rise in warm place until doubled in size, about 30 minutes to 1 hour.


3) Divide dough into 16 pieces.

5) Shape each piece into a ball .cover; let it rise in warm place until doubled in size, about 30 minutes.


6) Roll each in wheat bran to a 16 cm round.

Baba Ghanoush (moutabal al batnjan)

I got alot of requests for Baba Ghanoush (moutabal al batnjan) recipe by email ,so I finally did it I hope every one request it try it & likes it .

800 g small eggplants (roasted).
1/4 cup low fat yogurt.
1/8 cup fresh lemon juice.
1-2 clove garlic, crushed.
1/4 cup tahini.
3/4 -1 teaspoons salt.
1/2 cup fresh coriander.

5) Sprinkle with chopped parsley or coriander and Serve with pita bread or try it with my quick flat bread.

Quick 10 Minutes Dough flat bread

Makes 4 large or 8 small.

1 recipe 10 Minutes Dough ( I use 2 whole wheat flour cups +3 white flour cups in this recipe).

1) Preheat the oven to 550F.

2) Divide dough into 4 or 8 pieces.

3) Shape each piece into a ball.

5) Place onto oven trays or hot baking surface for 2-3 minutes.

Daqous (Arabic Gulf Spicy Tomato Sauce)

3 chopped tomatoes.
2 teaspoons tomato paste.
Salt and Fresh black ground pepper.
Pinch of red hot pepper.
1 teaspoon olive oil.
1/2 teaspoon Arabic gulf mix spice.
1/4 teaspoon Daqous spice.


1) In a pot, add chopped tomatoes, tomato paste, olive oil and spices.


2) Cook the sauce, uncovered, on low heat for about 15-20 minutes or until tomatoes crushed & the sauce texture thickened.

3) Serve with any Arabic gulf rice dish.

Sambosa bel joben

1 1/2 cups all purpose flour.

1 1/2 cup whole wheat flour.
1 1/2 Tablespoon olive oil .

1 1/3 to 1 1/2 cup fat free milk or water.

1 teaspoon sugar.

1/2 teaspoon baking powder.
1/4 teaspoon salt.
Dash of ground black pepper.

Filling:
500 grams low fat feta cheese.
250 grams low fat halloumi or mozzarella cheese, shredded.
1/2 cup Cheddar cheese,shredded.
1/2 teaspoon dried mint.
Dash of ground black pepper(optional).

Sealing dough:
1/4 cup all purpose flour.
1/4 to 1/3 Water.

1)To make dough:mix all the ingredients, knead dough for 2 to 5 minutes, cover with plastic wrap; stand at room temperature for 15 minutes.


2)Divide dough into 50 equal pieces, let rest for 15 more minutes, roll each piece, on a floured surface, into a 10cm round, place 2 teaspoons of filling in the center of dough.


3)Brush the edges with the sealing dough, fold into cone shape, press edges together to seal, repeat with remaining dough and filling.


4)Deep-fry sambosa in hot oil in batches until browned, drain on absorbent paper.

Tasaly (crackers)

1/2 cup white flour.
1/2 cup whole wheat flour.
1/4 cup parmesan cheese.
1/4 cup water.
1 Tablespoon olive oil.
1 Tablespoon maple syrup.
1 Tablespoon baking powder.
1/2 teaspoon dried oregano.
1/2 teaspoon dried basil.
1/4 teaspoon salt.
Pinch of garlic powder.

1)To make dough, mix all the ingredients, knead dough for 2 minutes, divided in to 24 equal pieces, let rest for 10 minutes, shape each pieces to long stick.


2)Place it on a baking tray ,then shape it to zigzag shape . Bake at 350 F for 10-15 minutes, then turn of the oven and let crackers dry inside the oven.


3)Serve with labnah or any of your favorite dips or soup.

Lafaef Alqulash beljobin (Qulash Cheese Snails)

1 packet (625g) fillo pastry.

* milk mixture:
1 cup milk.
1 tablespoon olive oil .

*Filling:
450 g Feta Cheese .
200 g mozzarella Cheese
chopped fresh mint.
chopped fresh coriander.



1)mix the Filling ingredients.




2)Brush 1 sheet with milk mixture,place 1-2 tablespoon of Cheese mixture,roll pastry over filling,using this method here.

3)Brush snails top with milk mixture,repeat with remaining pastry.


4)Bake at 350 for 20-25 minutes or until browned lightly.

5)Serve with my mom potato soup.

zainab's green Salad

6 cups fresh parsley,coarsely chopped.
3 cups coarsely chopped fresh mint.
3 large tomatoes, chopped.
3 small green cucumbers,chopped.
2-3 green shallots,finely chopped (optional).
seedless black olives (optional).

DRESSING

1/3 cup lemon juice.
2 Tablespoons olive oil.
salt.


1)Combine tomatoes ,cucumbers,green shallots,black olives and herbs in bowl.

2)Just before serving drizzle with dressing.

Mtabaq lahem

For dough :
1 1/2 cup white flour.
1 1/2 cups whole wheat flour.
1 teaspoon baking powder.
1/4 teaspoon salt.
2 Tablespoons olive oil.
1 1/3 cup water.

For filling:
1/2 Tablespoon olive oil.
500 g ground meat.
1/4 teaspoon black paper.
1 teaspoon salt or to taste.
1 small onion, chopped.
3 boiled eggs.
1/4 cup cheddar cheese cubed.
2 Tablespoons parsley, chopped.

Olive oil, extra for cook the Mtabaq.



1)For filling: Heat oil in large pan, cook onion until browned lightly, add meat and spices,cook,stirring, until browned,remove from pan.


2)Add boiled eggs, cheddar cheese and parsley.


3)For dough: place all ingredients in the bowl of mixer ,beat 3 minutes to make a soft dough.
4)Divide dough into 12 pieces.


5)Roll each portion into square.
6)Drop a 3-4 Tablespoons of filling into centre of each square ,fold over to enclose filling.










7)Heat oil in large pan, cook Mtabaq until browned on both sides.




8)serve with soup or green salad.
