Mom's Potato Soup


1 Tablespoon olive oil.
1 medium onion, finely chopped.
3 Scallions,finely chopped.
1 clove garlic, crushed.
1 boneless,skinless chicken breast (finely chop).
2 medium potatoes,chopped.
4 cups water.
3/4 cup low fat milk.
3 Tablespoons chopped fresh parsley.
Salt and ground pepper.

1)Heat oil in pan, add onion, cook, and stirring until onion is just soft, add garlic and scallions stir over heat than add chicken and spices,cook until chicken is lightly browned and almost cooked.

2)Stir in potato and water,bring to boil,simmer,uncovered about 10 minutes or until potatoes are soft.

3)Stir in milk and parsley,stir until heated through about 3-4 minutes.

4)Serve with qulash cheese snails.

YUM...this is just like the potato soup my mom always made, minus the chicken...she would put lil carrots in ours...either way, potato soup is soooo good!
