Grilled Chicken Salad

4 boneless skinless chicken breast.
Marinade :
1 Tablespoon olive oil
1/4 cup fresh lemon juice
2 cloves minced garlic
Salt & fresh ground black pepper (to taste)


250 g white mushrooms,Sliced.

1 head of romaine lettuce, chopped.
1cup cherry tomatoes, halved.
2 medium Lebanese cucumbers, chopped.
1 green bell pepper, chopped.
1 cup black olives.
1 cup green olives.
1/2 cup cheddar cheese,cut into chunks or shredded.
1 cup Yellow Sweet Corn Kernels, cooked.

Dressing:
1/2 Tablespoon olive oil
1/8-1/4 fresh lemon juice.
1 Tablespoon Tahini.
3 Tablespoons low fat mayonnaise
Salt (to taste)

1) First butterfly chicken breast, then cut it in half, pour marinade over chicken in pan, cover and refrigerate at least 1 hour or if you like over night.



2) Sauté mushrooms: Heat a sauce pan over medium heat, add a small amount of oil then add mushrooms & cook until the mushrooms are browned all over,season with salt and pepper ( Cool slightly).



3) Combine all salad ingredients in large bowl. Cover, refrigerate until serving.
4) Grill chicken for 4-7 minutes per side or until chicken cooked through,Cool chicken slightly before slicing.



5) Add chicken and sautéed mushrooms to salad mixture.
6) Drizzle with dressing before serving.



You can enjoy this salad as sandwich filling too with pita bread or any kind of flat bread or French bread(baguettes).

Kobzat al feta wal basal (Feta stuffed bread)

Dough:
6 cups unbleached flour.
2-2 1\4 cups warm water.
2Tablespoons oil.
1 Tablespoon sugar.
2 teaspoons yeast.
2 teaspoons baking powder.
2 teaspoons salt.
oil ,for shallow-frying.

Feta & cheddar Cheese Filling:



250 g cheddar cheese.
250 g Feta cheese.
2-3 scallions, sliced.
fresh Coriander, chopped.
Combine all ingredients in bowl,mix well.



1)Place all ingredients in the bowl of mixer, Knead until the dough is soft for 5 minutes. Put the dough in a bowl that has been sprayed with vegetable spray.

2)Cover dough and let rise in warm place until doubled in size, for 1-2 hours.

3)Divide dough into 16 pieces & roll each of them into a ball, roll the ball out into a round.

4)Fill each with 1-2Tablespoons of the filling, pinch and seal the edges.

5)Preheat frying pan or griddle iron over high heat. Then adjust the heat to medium heat & add 1 Tablespoon of oil.

6)On a lightly oiled board , flatten stuffed bread gently using your hand.



7)place the stuffed bread on the frying pan & cook until golden brown on both sides (1 to 2 minutes per side).



Serve with salad or soup.

Ka'ak Al Somsom Wal zatar (Sesame seeds & Zaatar Rings)

This is my entry for bbd #10 - breakfast breads hosted by Baking a Sweet Life .

4 cups white flour.
2 cups whole wheat flour.
3 teaspoons yeast.
2 Tablespoons sugar.
1 teaspoon Salt.
2 Tablespoons butter.
2 Tablespoons olive oil.
1/2 cup Zaatar.
2 1/2 cups water.
8 Tablespoons dry milk.
1 small egg.


For Topping:

Sesame Seeds.
Milk or egg white.


1)place all ingredients in the bowl of mixer ,beat 10 minutes to make a soft dough.

2)Cover and let rise for 60 minutes.

3)Divide dough into 16 pieces; shape each piece into a ball, take one piece of dough and roll it out into a finger shape about 10 inches long , join the ends together.

4) place the rings on a baking sheet , brush the top with milk , sprinkle with sesame seeds.

5) Cover and let rise for 15-20 minutes.

6)Bake at 375 for 20-25 minutes.

Lofafat Dajaj Bel Khodar

I made this recipe for BreadBakingDay #5.

For dough:


1 cup all purpose flour.

1 cup whole wheat flour.

2 Tablespoons corn oil or olive oil.

3/4 to 1 cup fat free milk or water.

1 Tablespoon sugar.

2 teaspoons yeast .

1 teaspoon baking powder.

For filling:

1/4 teaspoon salt.

500 grams ground chicken breast.

3 medium carrots, shredded.

1 medium onion, chopped.

500 grams mushrooms, chopped .

1/2 cup cheddar cheese, shredded.

1 tablespoon milk .

1 teaspoon Arabic gulf spice mix.

1/8 teaspoon black paper.

Salt to taste.

*Chicken filling:

*Sauté onion, stir, cook 5 minutes, Add chicken, salt, and spices , stir, cook, until chicken brown, add mushrooms and carrot, stir , cover, cook until tender.

*Remove from heat stirs with cheese and milk; cool.

1) To make dough, mix all the ingredients, knead dough for 8 to 10 minutes; cover with plastic wrap;place in a warm spot and allow to rise for 30 minutes, or until the dough has doubled in size.


2)Turn out onto a lightly floured surface, Roll dough into rectangle. Spread filling over, Roll the dough up, starting from the long side. Seal the seam when finished rolling up.

3)Slice rolled-up log into pieces and place in the greased baking pans.


4)Cover the pans and let the dough rise in a warm place until nearly double in size, about 30 minutes.

5)Bake rolls in a preheated, 350-degree F. oven for 20 to 25 minutes, or until golden.
Cool rolls slightly, and then remove from pans. Serve.

Sahan Fatayer

*For Feta Cheese Filling:
450 g Feta Cheese.
chopped fresh mint.
1 teaspoon sumac.
1/2 teaspoon olive oil .

*for mini pizza topping:
Tomato sauce
Green Olives
Black olives
low fat halloumi or mozzarella cheese, shredded.

*for spinach Filling:
2 teaspoons olive oil.
2 small onions, finely chopped.
500-600 g spinach, Fresh or frozen.
2 teaspoons salt.
2 Tablespoons sumac.
1/2 teaspoon black pepper.
1 teaspoon Arabic Gulf mix spice.
1/4 cup lemon juice.
1) Heat oil in pan add onion, cook, stirring until is soft. Than add spices, and spinach, stirring than add lemon juice, cook about 5 minutes (cool to use for filling).

2) Divide dough into 36 pieces. Roll each to a 9 cm round.

3) Fill each with 1-2Tablespoons of any filling above.

4) Place Fatayer onto oven trays.

5) Bake at 375 F about 15 minutes or until browned.
