Lahm bi ajin for BBD#21 (pizza-party) & Arugula Mint Salad

First prepare the Sauce & Herb Topping:

Yogurt & Tahini Sauce:
340 g low fat Yogurt.
1 Tablespoon Tahini.
2 Tablespoons fresh lemon juice.
pinch of salt.
Crushed dried mint for garnish.
Combine all the ingredients & set aside.

Herb & Tomato Topping
Fresh parsley ,Coriander & mint , finely chopped.
1 Medium tomato, chopped.
Mix and set aside.


Dough:

makes 8 oval shapes
1 cup whole wheat flour.
2 cups unbleached flour.
3\4 -1 cups warm water.
1 teaspoon dry yeast.
1 teaspoon sugar.
1 teaspoon salt.
2 tablespoons olive oil
1 egg (small).

Minced Lamb Topping:

250 g Minced Lamb.
1 Medium tomato, finely chopped.
1 Medium Onion, finely chopped.
1 clove of garlic, Minced
1 teaspoon dried parsley
1/4 teaspoon ground cumin.
1/8 ground black pepper.
1 teaspoon olive oil
2 teaspoons tomato paste.
Salt to taste.

Mix the lamb, chopped tomato & onion, salt ,pepper, cumin & tomato paste in a bowl and set aside.

1) place all dough ingredients in the bowl of mixer , knead for 10 minutes to make a soft dough.

2)Cover the dough and let rise for 30 minutes.

3) Preheat oven to 500 F.

4) Divide the dough into 8 pieces. Shape each piece into a ball.



5) Flat each ball into oval shapes on a floured surface. Place the lamb topping on the dough and leave about 1cm on either side for the crust. Fold the dough in on either side.





6) Bake at 550 for 10 minutes.



7) serve with Arugula Mint Salad on side.

*For vegan or vegetarian you can use mushroom or cooked brown lentils instead of meat.

How to serve lahm bi ajin:
Slice them into smaller pieces with fresh Squeeze lemon juice on top ,drizzle yogurt & tahini Sauce all over the top & sprinkle with Herb & Tomato Topping.
You can also try it with pickles, peppers, onions and Lettuce.




Arugula Mint Salad



Arugula leaves (1 bunch).
White Radish leaves (1 bunch).
Mint (1 bunch).
2 medium Lebanese cucumbers, chopped.
1 Medium tomato, chopped.
White onion ,Sliced.

Dressing:
olive oil
fresh lemon juiceSalt

1) Combine all salad ingredients.
2)Just before serving drizzle with dressing.

Mom's Lamb Saudi Kabsa

1 Kg diced Lamb.
Fresh ground black pepper.
Olive oil.


3 cups basmati rice.
4 1/2 cups water or Beef stock.
1/8 teaspoon ground turmeric.
2 teaspoons salt.


1) Heat oil in pan, add diced Lamb in batches, season with fresh ground black pepper, cook until browned all over.

2) Lower the heat & cook the meat, covered until lamb is tender.

3) Add basmati rice, water, turmeric & salt to pan with meat , bring to boil, simmer cover, and cook on a very low heat for 12-20 minutes.

4) Serve Lamb Kabsa with Salata Hara or Daqous + and green salad.

Rez Bil Siniah

250 gram ground meat.
2 cups basmati rice.
3 1/2 cups water or chicken broth.
1 cup frozen peas.
1 medium carrot, chopped.
1 medium onion, chopped.
1 teaspoon arabic gulf mix spice.
1 1/2 teaspoon salt or to taste.
1/4 teaspoon black paper.
1/2 teaspoon cinnamon.
1 tablespoon qaimar mix with 2 tablespoons water.
1/2 cup mozzarella cheese, shredded .


1)Sauté onion, stir, cook 5 minutes, Add ground meat, stir, cook until browned, add spices, 1/2 teaspoon of salt.


2)Add water to large heavy-based pan bring to boil. Add carrot simmer for 5 minutes; add basmati rice, peas, salt, and meat mixture, covered with tight-fitting lid, simmer over low heat about 25 to 30 minutes.


3)Remove from heat, pour rice mixture to oven pan, spread qaimar over rice and sprinkled with cheese.


4)Brown under broiler for 1 to 2 minutes or until golden brown.

Mtabaq lahem

For dough :
1 1/2 cup white flour.
1 1/2 cups whole wheat flour.
1 teaspoon baking powder.
1/4 teaspoon salt.
2 Tablespoons olive oil.
1 1/3 cup water.

For filling:
1/2 Tablespoon olive oil.
500 g ground meat.
1/4 teaspoon black paper.
1 teaspoon salt or to taste.
1 small onion, chopped.
3 boiled eggs.
1/4 cup cheddar cheese cubed.
2 Tablespoons parsley, chopped.

Olive oil, extra for cook the Mtabaq.



1)For filling: Heat oil in large pan, cook onion until browned lightly, add meat and spices,cook,stirring, until browned,remove from pan.


2)Add boiled eggs, cheddar cheese and parsley.


3)For dough: place all ingredients in the bowl of mixer ,beat 3 minutes to make a soft dough.
4)Divide dough into 12 pieces.


5)Roll each portion into square.
6)Drop a 3-4 Tablespoons of filling into centre of each square ,fold over to enclose filling.










7)Heat oil in large pan, cook Mtabaq until browned on both sides.




8)serve with soup or green salad.

Kibbi mihshiyya

A traditional dish, originally came from Lebanon, in ramadan every table in the Middle East must have this dish, serve it with tabbouleh or cucumber with minted yogurt.

Basic kibbi :
1 lb ground lamb meat
1 lb burghul
1 teaspoon salt (or to taste)
1/8 teaspoon ground black pepper
1/8 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 large onion, grated


(Hashwat al-kibbi)
Basic stuffing:

1/2 lb ground lamb meat
1 medium onion, finely chopped
2 teaspoons olive oil
1/2 teaspoon salt (or to taste)
1/8 teaspoon ground black pepper
1/2 teaspoon ground cinnamon
1/4 cup water


1)to make the Basic kibbi:
wash burghul with cold water (don't soak it) drain and press between palms of hand to remove excess water , mix it with ground meat, onion , and spices, run the mixture through a meat grinder one time .







2)To make stuffing: Heat oil in pan; add onion cook, and stirring until onion is soft. Add lamb, spices, stirring, until lamb is browned. Add water, cook it for 15 minutes in a low heat, Remove, and let it cool.








3)Place in palm of hand a walnut-size chunk of kibbi, using forefinger press a hole and begin expanding the filling hole by rotating and pressing against palm of hand. Place a teaspoonful of stuffing into shell .carefully close, Shape it to ovals.




4)Shallow fry Kibbi in hot oil in batches until browned all over and cooked through; drain on paper kitchen towels.

"Laham bl ajen"=spicy Lamb Pizza

for dough:
1 cups warm water
1 cups warm milk
2 teaspoons dry yeast
2 cups whole wheat flour
3 cups white flour
1 teaspoon salt
6 tablespoons olive oil
1)place all ingredients in the bowl of mixer ,beat 10 minutes to make a soft dough.


2)Cover and let rise for 30 minutes.
after 30 minutes


3)Divide dough into 16 pieces.shape each piece into a ball.Cover and let rise for 20 minutes

after 20 minutes

4)Roll each ball into a 21cm round,brush the top with olive oil .

5)Top each with a tablespoon of lamb mixture.leaving a 1cm border.


6)Bake at 450 for 9 minutes.


7)Serve with yogurt .



*for Topping:
Lamb or Beef mixture:


500 g ground lamb or beef
4 medium onions
2 medium tomatoes
fresh cilantro(optional)if you want your topping red do not add it.
2 tablespoons tomato paste
2 tablespoons pomegranate molasses
salt and ground pepper
combine ground lamb or beef,onions,tomatoes,and cilantro in food processor or food grinder than add tomato paste,pomegranate molasses,salt and ground pepper

*for vegetarian you can use portabello mushroom or cooked brown lentils instead of meat.
*if you can not find pomegranate molasses,you can use 1\2 teaspoon Lemon salt.
