Sprouted Wheat Flat Bread

This is my entry for bbd #11 -one year anniversary of Bread Baking Day - bread with sprouts hosted by BBD’s founder, Zorra (1x umrühren bitte).

304 g ground sprouted kamut wheat.
3 cups white flour.
2 cups water.
1 1/2 teaspoons yeast.
1 teaspoons salt.
1 Tablespoon sugar.
3 Tablespoons milk powder.

1) Place all ingredients in the bowl, mix until well combined by hand (The dough will be very sticky not soft).

2) Cover dough and let rise in warm place until doubled in size about 60 minutes.

3) Turn dough onto lightly floured surface, divide dough into 4 pieces, & shape each into a ball.

4) Preheat pan or griddle iron over high heat. Then adjust the heat to medium heat.

5) Place one ball into pan, flatten by your wet hand, make indents fingertips, cook about 1 minutes or until the bottom side browned.

6) Place flat bread on oven trays under the broiler until golden brown.

Salata Hara

3 chopped tomatoes.
1/2 cup fresh coriander.
Juice of half a lemon
salt to taste.


To make Salata Hara:
Blend or process chopped tomatoes+ fresh coriander until pureed than add the lemon juice & salt to taste.

Albasara

Albasara is easy recipe for make simple soup , it is popular all over arab world .
Originally from Egypt and they make it with Fava Beans .
I love to make it with yellow lentil.



For Albasara you will need:



1/3 cup yellow lentil.

1 medium onion,quartered.

1 medium tomato ,quartered.

1 large carrot.

chopped fresh parsley.

1 1/2 teaspoon salt.

ground cumin & pepper.

4 cups water.



1)Add lentil + 2 cups water to pan , bring to boil, simmer, uncovered, until tender about 20 minutes.



2)Than add spices,onion,tomato,carrot and 1 cup water,simmer for 20 minutes.



3)Blend or process the soup + 1 cup water until smooth.



4)Return soup to pan ,add the parsley & cumin, simmer for 15 minutes.



5)Sreve it with fresh Squeeze lemon juice.

2 packet spring roll sheets

Sherah (sugar syrup):
1 cup sugar.
1/4 cup water.
1/4 cup rose water.
1 teaspoon ground cardamom.
Pinch of saffron threads (crushed).

1)To make syrup: combine all ingredients in medium pan. Stir over low heat without boiling, until sugar is dissolved, simmer, uncovered, without stirring about 5 minutes or until syrupy.

2)Layer sheet, brushing half the sheet with syrup roll up like a Swiss roll to enclose.(seal the end with syrup).

3)Place on baking sheet, bake in 300 F oven until browned lightly.
Serve with Arabic Gulf coffee or cardamom tea.

khobiz mohala (sweet round bread)

Makes 16.


A traditional bread recipe in Arabic gulf area, bakes in a special tanor build in the ground.

Serve in weddings, special occasions (Eid al adha), or the religion occasions, with coffee and dates.

This recipe is so healthy and full of nutrition.

For the dough:
5 1/2 cups all purpose flour.
1 1/2 cup wheat bran.
1 tablespoon yeast.
1/2 teaspoon baking soda.
1/4 cup sugar.
1/3 cup date molasses.
A pinch of saffron soaked in 2 tablespoon of rose water.
1 cup pitted dates soaked in 1 cup of boiling water (let it cool before use it).
3/4 cup water.


In a small bowel mix together:
2 tablespoons boiling water.
2 teaspoons sugar.
1/2 teaspoon baking soda.

Toasted sesame seeds.

1)To make the dough mix the entire ingredient, knead the dough for 10 minutes. Place it in a bowl, cover, let rest for 1 hour.




2)Divide dough into 16 pieces,Shape each into a smooth ball.


3)Flat each to make a flat round square, then brush each with the (sugar and baking soda mixture), make indents with fingertips.




4)sprinkle with sesame seeds, Place on baking sheet, Cover let rise 30 minutes.



5)Bake at 350 for 20 minutes.or until it golden brown.
