Halzonat beljobin w neana (Feta Cheese & mint Snails)

Further to Zorra’s invitation to take part in the breadbakingday event, I am pleased to participate in its first edition under the theme bread and herbs. Here’s the roundup of the 31 wonderful breads baked by the participants, BreadBakindDay Roundup .

* milk mixture:

1 cup milk.

1 tablespoon olive oil .





*Filling:

450 g Feta Cheese .

chopped fresh mint.

1 teaspoon sumac.

1/2 teaspoon olive oil .



*mix the Filling ingredients.




*For dough :

2 1/8 cups white flour.

1 cup whole wheat flour.

1 1/4 cups warm water.

1 tablespoon dried mint.

1 teaspoon dry yeast.

1/4 teaspoon sugar.
1/2 teaspoon salt.

1/4 cup olive oil .


1)place all ingredients in the bowl of mixer ,beat 10 minutes to make a soft dough.

2)Cover and let rise for 30 minutes.



3)Divide dough into 8 pieces.

4)shape each piece into a ball.



5)Roll each piece through pasta machine set on thickest setting,fold dough in half,roll through machine,repeat rolling several times,dusting dough with extra flour when necessary.


6)Roll dough through machine ,adjusting setting so dough becomes thinner with each roll,dust with extra flour,when necessary.roll to second thinnest setting (1 mm thick),making sure dough is at least 12 cm wide.




7)Cut into 2 pieces.

8)Brush it with milk mixture.


9)Place 1 tablespoon of Cheese mixture,roll pastry over filling.













10)Brush the top with milk mixture.Cover and let rise for 20 minutes.


6)Bake at 400 for 20 minutes.

Ataif bil ashta

This recipe from the Middle East, we eat it especially in Ramadan or any time of the year, cause it's so tasty.


For the dough:
2 cups all purpose flour
1/4 cup whole wheat flour
1 1/2 teaspoon yeast
1 1/2 teaspoon sugar
1 1/2 cup fat free milk
1 1/2 cup water.


For the filling (ashta):
2 cups fat free milk
7 1/2 tablespoons corn starch
1/4 cup + 1 tablespoon sugar
2 to 3 tablespoons thick cream (qaimar which is an Iraqi cream) but you can use the regular thick cream
2 tablespoons rose water
1 teaspoon vanilla
Chopped pistachio

To make the dough:
1-Mix all the ingredient and let it rest about 40 minutes.

2- cook about 2 tablespoon of the dough mixture in a hot pan until it bubble (just cook one side).







After finishing ,let them cool then fold half round then fill them with the filling ( using a pastry bag ) then dip them in the chopped pistachios.





To make the filling:
Mix corn starch with milk and sugar then bring it to boil in a medium pan, stir until thickens, then add the rest of the ingredient.

Spoon mixture into a bowel, refrigerate until cold.

Sesame seed & Saffron Bread

This Bread is quick ,easy and tasty.
it is good for breakfast or for afternoon snack with tea.
* 2 cups white self-raising flour.
* 1 cup whole wheat self-raising flour.
1 teaspoon dry yeast.
1/2 teaspoon baking powder.
1/4 teaspoon salt.
4 tablespoons oil.
4 Tablespoons rose water.
2 Tablespoons sugar.
3 Tablespoons evaporated milk (low fat).
2 eggs.
1 1/2 cups warm water .
1/4 cup dried dates,chopped.(optional).
*Home made white self-raising flour:1 cup white flour + 2 teaspoon baking powder.
* Home made whole wheat self-raising flour:add baking powder to whole wheat flour as above to make whole wheat self-raising flour.
1)Beat eggs and sugar in small bowl with electric mixer until light and fluffy.


2)Stir in dry ingredients,milk,oil,warm water and rose water.


3)Spread mixture into prepared pan,sprinkle with roasted sesame seeds and Saffron.



4)or you can grease the pan ,sprinkle it with roasted sesame seeds and Saffron than Spread the mixture over.


5)Bake at 350 for 35 minutes.

chocolate faces

For the dough:
3 1/2 to 4 cups all-purpose flour
1 tablespoon yeast
1 teaspoon baking powder
1 teaspoon vanilla
3/4 teaspoon salt
1/2 cup sugar
1 egg
1/4 cup milk powder
1/2 cup butter or 1/4 cup oil
1 cup water
For Filling:
chocolate chip (each face take about 6 pieces)
For Glaze:
One egg yolk + 2 tablespoon milk + 1 teaspoon vanilla
And some melted chocolate chip to drew the eyes and mouth .
1-Make the dough by mixing all the ingredients , Turn out on to a floured surface ,Knead it to get a nice smoth and elastic (about 8 to 10 minutes). Place in a bowl ,Cover ,let rise in a warm place till double ( about 1 hour).
2-Cut the dough to 64 equal pieces , Flat each one with your hand , And fill it with 6 pieces of chocolate chip , close it and shape it to a nice round ball. Place it in a baking sheet ,Brush it with the Glazed , then take a small piece of dough to make round nose.
3-Let it rise about 30 minutes, Bake in 350 Oven for about 20 to 25 minutes.
4-Let it coll for 10 minutes ,Then drew the eyes and mouth . And serve
Makes 63 faces.









sesame seed bagels

2 1/2 cups all purpose flour
2 cups whole wheat flour
4 1/2 teaspoon yeast
1 1/2 cups warm water
3 tablespoon sugar
1/2 teaspoon salt
1 egg white mixed with 1 tablespoon water, for egg wash
Some toasted sesame seed
1 Gallon water with ,1 tablespoon baking soda
1-combine warm water with yeast and sugar, than add the flour and salt ,Knead the dough for 8 minutes.Place it in a bowl, cover ,let rest for 10 minutes.
2-Cut in to 12 portions, Shape each into a smooth ball.Punch a hole in the center of each, Place on a greased baking sheet, Cover let rise 20 minutes
3-Bake in a 450 F Oven for 6 minutes, then remove from oven. Reduce oven temperature to 350° F. Bring the water to a boil in a deep skillet, pan or pot. Dissolve baking soda in boiling water , Cook 3 to 4 bagels at a time for 1 minutes. 1/2 min to each side ,Gently remove bagles from water with tongs or slotted spoon; place on paper towel to drain. Repeat until all bagles have been boiled.
4-Place on a baking sheet ,Brush bagles with egg wash ,Sprinkle with toasted sesame seed . Bake in preheated 350°F. oven 19 to 20 minutes, or until golden brown.

Zainab's flat Bread

Makes 16 flat Bread
1 Kilos flour,unbleached,whole wheat,or a mixture of the two
1 teaspoon salt
1 teaspoon sugar
1 Tablespoon yeast
1 Tablespoon Baking powder
2 cups water
5 Tablespoons oil
1)place all ingredients in the bowl of mixer ,beat 10 minutes to make a soft dough.
2)cover,let rise in warm place until doubled in size ,about 1 hour.
3)Divide dough into 16 pieces. Roll each to a 20 cm round.
4) preheat the oven to 550 degrees. i do not have a baking stone,so i use the grill pan
5) Bake for 1 minute per side.
6)Open the oven and place the flat Bread on the hot baking surface. They should be puffy after 1 minute.
