Meedo's Delicious Chicken Kofta & Sample Arugula Salad

Recipe by:meedo


500 g Minced chicken breast.
1 Onion, Minced.
1/4 cup Fresh parsley or Coriander, finely chopped.
1/4 cup bread crumbs.
1 egg.
1/4 teaspoon ground cumin.
1/4 ground black pepper.
Salt to taste.
olive oil for shallow-frying.


Filling:
Frozen Mixed Vegetables (Carrots, pease, Corn)
Or any vegetables you want.


1)Mix all ingredients well.

2)Take about 1/8 cup of the mixture, Put about 2 teaspoons of the filling in the center and gently enclose it, Shape them into sausage shape.


3)Heat oil in frying pan, shallow- fry Kofta in batches until golden browned and cooked through.




Serve with basmati rice & sample arugula salad.




Sample Arugula Salad

Arugula leaves.
Tomatoes.
Cucumber.
Coriander, finely chopped.

Dressing:
olive oil.
fresh lemon juice.
Salt.

I love kofta! I've never had it stuffed with veggies before, but I will have to try it. Your pictures of the arugula salad are beautiful - so colorfu!

I made your mom's Roasted Chicken with Basmati rice and the zucchini pancakes and some of your flat bread and hummus...Yummy, nothing was left! glad to find your arabic food recipes. been living in jeddah for more than ten yrs. and me and my family used to buy cooked arabic foods, but now we're in canada and now that i've found this i have to try cooking following your recipes. everyone's gonna be excited for sure, we've been missing the taste of your food that we once enjoyed.thank you for sharing your recipes.

I had to stop by and say that I tried this recipe, and I think I found a FAVORITE DISH :) It was truly Yummy :) I had to make some more for my coworkers. Now they want the recipe too! Always wanted to buy minced chicken at our halal store, but didn't know what to make...so thanks for the recipe.

I tried this recipe tonight and it is really good. I do think that you need 3/4 cup of breadcrumbs, half cup of finely chopped onions and half cup of fresh chopped parsley. I also added paprika to the mix. The vegetable filling ads a balance to the taste of the meet. Well done.
