This recipe from the Middle East, we eat it especially in Ramadan or any time of the year, cause it's so tasty.
For the dough:
2 cups all purpose flour
1/4 cup whole wheat flour
1 1/2 teaspoon yeast
1 1/2 teaspoon sugar
1 1/2 cup fat free milk
1 1/2 cup water.
For the filling (ashta):
2 cups fat free milk
7 1/2 tablespoons corn starch
1/4 cup + 1 tablespoon sugar
2 to 3 tablespoons thick cream (qaimar which is an Iraqi cream) but you can use the regular thick cream
2 tablespoons rose water
1 teaspoon vanilla
Chopped pistachio
To make the dough:
1-Mix all the ingredient and let it rest about 40 minutes.
After finishing ,let them cool then fold half round then fill them with the filling ( using a pastry bag ) then dip them in the chopped pistachios.

I live in the US and I've been wanting to make this recipe except I don't know what Qaimar is and where I can find it...is it a cream made by Nestle?

qaimar is (thick Iraqi cream)and we use it alot in arabic gulf area ,you can substitute it with cream.
brand made qaimar (Nestle,KDD,altaj,alsaudia)

please do you will love it and make it so often ,when you make the ashta filling you pinch to the Center,and for nuts filling you pinch the ends together all the way and fry them and deep them in surype. but this is the light version.

question: we used to make something similar to this but we fried it and then drizzled with honey....do you know what that would be or could we fry these?
(i know it's healthier not to, but when they are crispy, it's soooOO good!)

how do you create the holes on the ataif pancake? I tried to make this recipe twice, and the problem is that the holes on the ataif pancake is too small and i feel that the ataif is not fully cooked when removed from the pan (of course the side touching the pan is cooked but even the hole side should feel dry and full of craters).

Hi, I tried the recipe for the ashta twice, and it came out very solid more like mhalabiyeh texture after you put in the fridge, it's impossible to pipe through a bag . did I do something wrong? I would really love to do this because ashta is one of the most important ingredient in a lot of our arabic pastries. Another question I noticed in another recipe you added ricotta instead of gaimar what is the difference? thanks in advance and really great website.
