Recipe by:zainab
For dough:
2 teaspoons yeast.
1 teaspoon sugar.
1 1/3 cups warm water.
1 1/2 cups white flour.
1 1/2 cups whole wheat flour.
1 teaspoon salt.
1/4 cup olive oil.
For lentils topping:
1 teaspoon olive oil.
3/4 cup brown lentils,(you can use meat).
2 small onion, finely chopped.
2 cloves garlic, crushed.
1/2 teaspoon ground cinnamon.
1 teaspoon ground cumin.
1/2 teaspoon arabic mix spice.
2 teaspoons salt.
2 small zucchini, grated.
2 Tablespoons tomato paste.
2 large tomatoes, finely chopped.
1) Combine all dough ingredients. Knead to make soft dough. Knead dough about 5 minutes or until smooth and elastic.
2) Place dough in oiled bowl, cover, and stand in warm place about 1 hour.
3) Divide dough into 36 pieces. Roll each to a 9 cm round.
4) Place rounds onto greased oven trays top each with 1-2Tablespoons of lentils mixture.
5)Bake in hot oven at 400F about 15 minutes or until browned.
Serve topped with coriander.
For lentils topping:
1) Cook lentils for 10 to 15 minutes.
2) Heat oil in pan add onion, cook, stirring until is soft. Than add garlic, spices, zucchini, and cooked lentils, stirring than add paste and tomatoes, cook about 5 minutes or until thickened slightly, cool.

for arabic spice mix:
Cumin,coriander,Black Pepper,Garlic,White Pepper,onion,Turmeric,Chille,Bay Leaves,
all Spice,Cloves,Cinnamon,Ginger.
1) Blend or process spices together until crushed.
* You can use ground spice and mix it together.

Well, if i do not have to serve these 36 pizzas, and store some, i like to precook and store as it helps me a lot ! So, how to store and serve these pizzas again?
And if i have to make only one loaf, can i just half out all the ingredients?
Hi mona,
If you make 36 mini pizzas,and there any leftover ,store them in the freezer. than you can heat them in the microwave.
and you can make 4 large pizzas.
also you can half out all the ingredients.

These are fantastic--everyone I have served them to loves them, including the picky little kids. They are great to make for parties, since meat-eaters, vegetarians and vegans all gobble them up with equal gusto!
