Ka'ak Al Somsom Wal zatar (Sesame seeds & Zaatar Rings)

This is my entry for bbd #10 - breakfast breads hosted by Baking a Sweet Life .

4 cups white flour.
2 cups whole wheat flour.
3 teaspoons yeast.
2 Tablespoons sugar.
1 teaspoon Salt.
2 Tablespoons butter.
2 Tablespoons olive oil.
1/2 cup Zaatar.
2 1/2 cups water.
8 Tablespoons dry milk.
1 small egg.


For Topping:

Sesame Seeds.
Milk or egg white.


1)place all ingredients in the bowl of mixer ,beat 10 minutes to make a soft dough.

2)Cover and let rise for 60 minutes.

3)Divide dough into 16 pieces; shape each piece into a ball, take one piece of dough and roll it out into a finger shape about 10 inches long , join the ends together.

4) place the rings on a baking sheet , brush the top with milk , sprinkle with sesame seeds.

5) Cover and let rise for 15-20 minutes.

6)Bake at 375 for 20-25 minutes.

Zainab this recipe looks fantastic. I love sesame seeds sprinkled on bread. These look lovely with the wholemeal flour. :-)

This looks great! I've seen some similar items in some of our local Greek stores and bakeries, but of course they wouldn't use zaatar. It would probably be just thyme or something like that. I love zaatar, so I'll have to give this a try!

Your rings look great. I have never tried zaatar before, I'll have to keep an eye out for it. I also love the beautiful turquoise cloth they are sitting in.

I saw this bread at the BBD roundup. I have never tasted Zaatar, though I keep reading about it.
But the rings look very good. I'll try them without the spice.
