Maraq al Dajaj (Chicken & Potato Stew)

2 whole chicken cut to 4 each.
1-2 Tablespoons olive oil.
1Tablespoon grated fresh ginger.
2 medium onion, chopped.
3 cloves garlic, crushed.
2 medium potatoes, peeled, chopped.
2 medium carrots , peeled, chopped.
6 medium tomatoes, chopped (about 774g).
2 teaspoons curry powder.
1/2 teaspoon ground garam masala.
2 teaspoons salt.
1/2 teaspoon Arabic gulf mix spice.


1)Sauté onion, with olive oil , cook 7-8 minutes, than add garlic, ginger.

2)Add chicken, salt, and spices, stir, cook, until chicken brown, simmer cover, for 20 minutes

3)Add chopped tomatoes, potatoes, , and carrots ,and simmer cover, for 15-20 minutes.

4) Serve with (Yellow basmati rice & peas) and green salad.


To make Yellow Basmati rice & peas.

3 cups basmati rice.
4 1/2 cups water.
1/2 frozen peas.
3 Scallions,finely chopped.
1/2 cup fresh parsley or coriander, finely chopped.
1 teaspoon ground turmeric.
1 teaspoon salt.

1)In a deep pan add all ingredients, bring to boil, simmer cover, cook on a very low heat for 12-20 minutes.

Salams Ladies!!

I made this the other night. Turned out great! I did add 3 black loomi and koosa to it as well but it would be just as good without them. Great recipe! Say, I wanted to ask if you're familiar with Hasawi rice? The brown, whole grain rice from Al-Ahsa. I've never had anyone show me how to cook it but I have made kabsa with it. The only feedback I get is from my husb who tells me,"Yes, you got it right" or "no, this isn't right" :) If you have any recipes for cooking with it I would greatly appreciate it :).

you can make it with any Vegetable you want,I'm too add black loomi some time.
about Hasawi rice:I use it in salad it's so good,it's similar to brown rice,I'll try to get more information about it to answer you right.

Ahlan Umzacharia,

I found information about Hasawi rice,It's cooked just the same standard method for cooking rice, but Soaked before cooking 4-5 hours.
I am now in Dubai and when I go back to Saudi arabia I'll try to post recipes using Hasawi rice for you.

Thanks for the info!!! I know that I did have to wash it REALLY well but I didn't know I had to soak it for that long. It makes total sense though. Have a great time in Dubai! Try not to spend too much :) (Dubai Shopping festival time). I miss it there so much. Have been many times. Hope you get a chance to go to Global Village!! I never get tired of that place. There is so much to see and eat!!! :0. Ijust never get tired of Dubai period. There is always a new place, food, etc, to discover.

Hi!

In the recipe for the chicken stew, do I need to add any liquids before covering and simmering the chicken the first time? It seems to me to be a bit dry to try simmering the chicken for 20 min with just spices and oil.

It's just a question I had, but everything looks great and I'm planning on making it tonight!

Hi :)
You don't need to add any liquid,Because when you first cover & cook the chicken it's will give so much liquid,then when you add tomatoes it's will add extra liquid.
By using this way you will Maintain the concentration of flavor.
