Recipe by:meedo
1 1/2 cups all purpose flour.
1 1/2 cup whole wheat flour.
1 1/2 Tablespoon olive oil .
1 1/3 to 1 1/2 cup fat free milk or water.
1 teaspoon sugar.
1/2 teaspoon baking powder.
1/4 teaspoon salt.
Dash of ground black pepper.
Filling:
500 grams low fat feta cheese.
250 grams low fat halloumi or mozzarella cheese, shredded.
1/2 cup Cheddar cheese,shredded.
1/2 teaspoon dried mint.
Dash of ground black pepper(optional).
Sealing dough:
1/4 cup all purpose flour.
1/4 to 1/3 Water.
1)To make dough:mix all the ingredients, knead dough for 2 to 5 minutes, cover with plastic wrap; stand at room temperature for 15 minutes.
2)Divide dough into 50 equal pieces, let rest for 15 more minutes, roll each piece, on a floured surface, into a 10cm round, place 2 teaspoons of filling in the center of dough.
3)Brush the edges with the sealing dough, fold into cone shape, press edges together to seal, repeat with remaining dough and filling.
4)Deep-fry sambosa in hot oil in batches until browned, drain on absorbent paper.

we call it in saudi arabia "sambosa" or "sambosec" and I think is a littel difference between sambosa & Samosa.
in south saudi they make the sambosa dough using whole wheat,and we make it in east side half with & half whole wheat,and the crust is not very thin.
sambosa is popular finger food in Saudi Arabia especially in ramadan.
SUper delicious. Can i make this with Phyllo pastry and make in the oven.
In India we make them with potato and peas or minced lamp etc and we call them Samosa

wow its looks so Indian, here we call it Samosa! and the filling is mostly potatoes or mince meat!

Can you show how to fold the samosa? I have seen it in many books, but they all think that the folding is so easy it doesn't have to be shown...and I just don't get the triangular shape from my folding

We don't have meat filling listed on the blog for the sambosa.
but you can substitute the cheese with meat.
To make meat filling:
Sauté onion, stir, cook 5 minutes, Add meat, salt, spices , stir, cook, until meat brown.
* you can add mushrooms,Potato,parsley,scallions.
